Café Belmondo’s Artisan Roasting

All Café Belmondo coffees are Artisan Roasted. This process is very time consuming, but ensures that we provide to our customers the best possible tasting coffee. We first roast the green coffee beans in very small hand batches at different roast levels.
Cupping these coffees is the next step in our process. Coffee is taste tested much the way wine is tasted. In cupping, samples are pulled from the processed coffee. The samples are measured out into three to five different cups each containing about 8 grams of coffee. The cups are ground separately. Boiling water is poured over the ground coffee. The grinds rise to the top creating a crust that traps all of the aromas in the cup. The cupper breaks the crust and inhales the aroma and notes the characteristics of the aroma. In breaking the crust, most of the grinds sink to the bottom of the cup. Once the aroma has been evaluated, the coffee is tasted and judged on the characteristics of acidity, flavor, body, and taste defects.
Now that the optimum roast level for that coffee bean has been set, our artisan roaster is ready to roast our coffees in small batches. While small batches are more time consuming and thus more costly, it is the only way to have the utmost control over the roasting process, ensuring that you get the best tasting coffee. It also means that we do not have large supplies of roasted coffee sitting around our warehouse. Small batches means we have a continual supply of fresh coffee that we can ship to you, our customer.
After our artisan roaster has completed the roasting process, the finished coffee is again cupped to make sure that the coffee tastes exactly like we wanted.
